Vegan Buddha Bowl

Buddha Bowl:

Vague term for a bowl holding various greens, raw or roasted veggies, grains, seeds, and sauces.

Saffy’s Interpretation:

Throw anything you want in a bowl – just make sure it has all the colours of the rainbow for good measure!

This is my absolute #1 go-to for lunches. It’s incredibly quick, nutritious, and, above all, delicious! I recently did some stories on Instagram (now saved under my Recipes highlight here) showing you how I prep quite a lot of the ingredients in this recipe so definitely reference those stories if you want to see the process, otherwise, I’ll be listing out the steps in this post too!

First up: I toss sweet potato wedges in a little bit of olive oil, garlic powder, onion powder, smoked paprika, and “Everything but the Bagel” (from Trader Joe’s) and pop it in the air fryer (this is the one I use) until crispy.

In that same bowl (save on washing up!) I massage some kale in a little bit of olive oil and pop in the air fryer last (it truly takes less than 1 minute to get perfectly crispy).

I chop up some lettuce and also prep some quinoa (this is the tri-coloured one from Trader Joe’s)

Next I start to assemble the bowl whilst I let 2 falafels warm up (I made them the day before) in the air fryer. Here are the ingredients for the falafels:

  • 2 cans of chickpeas (drained)
  • 1 bunch of parsely
  • 1/2 bunch of cilantro
  • Cumin
  • Coriander
  • Salt
  • Juice of 1/2 lime
  • ~A cup of flour & panko (still trying to figure out the exact ratios here)
  • Garlic

Bung everything in a food processor, mould with your hands and then cook in the air fryer.

Pickled onions

For the pickled onions (also on Recipes highlights) I followed this recipe.

The cashew crema (again, also on Recipes highlights) ingredients are as followed:

  • ~ 300-400g (2-3 cups) of raw cashews soaked in hot water for about an hour
  • Roasted garlic (as much as you like!)
  • Juice of 1 lemon
  • ~ 1 cup of water
  • ~1 tablespoon of olive oil
  • Pinch of salt

Throw everything in a Ninja blender and blend until creamy smooth.

The pesto is another easy peasy recipe to make ahead of time and keep handy for recipes like this or pesto pasta dishes! All you need is:

  • Bunch of basil
  • Handful of pine nuts
  • Juice of 1 lemon
  • Garlic (I like lots, of course)
  • Olive oil
  • Pinch of salt

Whizz this up in the same Ninja blender (makes it extra smooth and the colour becomes so wonderfully vibrant) and that’s it!

All in all, my bowls typically comprise of as many colours as I can possibly fit in a bowl. This one has:

  • Lettuce
  • Quinoa
  • Cucumber
  • Cherry tomatoes
  • Castelvetrano olives
  • Pickled onions
  • Falafels
  • Pesto
  • Cashew crema
  • Sweet potato wedges
  • Kale chips

Get creative, try new ingredients, go wild! These bowls are always so fun to make which is probably why I enjoy eating them so much.
